You can select (or deselect) the various sections from the main News tab of the app by going to Settings > Edit News Sections. Be sure to scroll all the way down to see all available sections (including those that are not selected by default).
You can also change the order that the sections appear by pressing on the three lines to the right of the section you want to move (see screenshot below) and dragging it to your preferred location.
